Firstly you need to understand that there are some fundamental differences between Acronis and Symantec back-up and in part this is down to where they came from. Veritas (Now Symantec) came from a back-up background I first started using Veritas and Arcserv around 1997, whereas Acronis have come from a Drive imaging background no idea how long they have been around but not as long as Veritas. Tape Back up and drive image may appear to be the same, but there are some fundamental differences in how the software evolved.
For servers you should use a dedicated backup software, not one that can also backup. Acronis is OK to take snapshots and complete images of a server, but this is a one time job you should do after installation. After that just backup the data.
Veritas will back up to tape, file etc, whereas Acronis doesn't back-up to tape, although strangly you can if you boot using the Acronis Boot CD (It is possible you can and I'm just blind, but damned if I can work out how you back-up to tape using acronis normally).
